Have you ever been to Hausbar Farm? It's a sustainable urban farm in east Austin, and one of the most magical places you will ever go. Dorsey, the owner of Hausbar, knows everything about each little plant and creature that runs through her farm, and took us on the most fun, edible plant tour. We had a blast walking around the farm and ended up foraging plants to incorporate into the dinner menu, tablescape design, and even a couple specially brewed beers. We were lucky to have the talented Ashleigh Amoroso capture photos of both, the foraging tour at Hausbar and The Elephant Table Launch dinner. Enjoy!

Huarache - papalo infused masa, camote lime filling, chili braised rabbit , green papaya kimchi.

Eggplant Chip - eggplant pate, satsuma ricotta, fried spinach chip, cured duck yolks

Okra Station - lomo wrapped smoked okra | tempura okra stuffed with preserved lemon & garlic chive goat cheese | grilled okra with sweet chili glaze

peanut crusted squash blossom, lobster, sage roasted garlic, salsa macha

Course Two | Salad

skyr, chickpea puree, herb salad, grilled grapefruit, honey vinaigrette, fried chickpeas

Course Three | Duck Leg

hoja santa wrapped duck leg confit, duck yolk malbar berry pasta, fresh malbar spinach leaves, duck jus

brown butter oat cake, fig leaf ice cream, African blue basil blueberry truffles, blueberry molasses
